1850: Our Origin

Oliviero's family has been in the salumi world forever. His grandfather was already making salami in Norcia, Italy and then his father, and now him.

1900: Roman Expansion

His great grandfather moved to Rome to bring his trade into a bigger market opening salumi stores throughout Rome.

1950: Building the Future

In 1950 his grandfather started a manufacturing business that became one of the most successful salumi business in Rome.

1978: Enter Oliviero

Oliviero was born and raised in Rome into a family of salumi makers. As a boy, Olli spent plenty of time at his grandfather’s prosciutto and salami factories, and by an early age he picked up a lot of knowledge about how to cure various meats.

2000: Family Business

In 2000, Oliviero joined his grandfather’s company and started learning the traditional techniques of creating everlasting salami filled with history, tradition, patience, and quality.

2010: Olli Salumeria

Ten years later, Olli decided to start his own company in Virginia, Olli Salumeria, and there began the journey which leads to today. When we began, the only item we produced was chubs, the most common salami in the market at the time.

2013: Oprah

Named one of Oprah’s Favorite Things this holiday season.

2015: Go West

Olli Salumeria moved to Oceanside California to expand the company and products to an 100,000 sq ft facility producing over 100,000 lbs of salami a week and expand nationwide. With this new facility we were able to expand our portfolio from chubs to include sliced salami in both large and small diameter. This also allowed us to expand our presence in foodservice.

2017: Goodness to Go

In 2017 Olli Salumeria became part of the snack world with Olli snacks. We started with limited distribution and are now available nationwide in retailers, hotels, airports and many other locations.

2020: Flavor Endures

On our ten year anniversary year we overcame the obstacles we all were facing with COVID and came out the other side healthy and ready to continue pushing the Olli brand to everyone.

2021: Expansion

Opened a new 40,000 sq ft warehouse for dry and finished good storage and office space for finance, sales and marketing. Moving this down the street allowed us to expand our line capacity.

2023: Preservative Free

Olli launched the first truly preservative-free salami in their Chubs and Salamini lines. This is an industry first that delivers pure products with no additives and no loss of freshness—just clean, honest flavors.
